The goodness of veggies adds a lot of flavor and crunch to this delicious omelet.
Ingredients:
- 2 eggs
- 2 Tbsp oil
- 1/2 an onion, chopped
- 3 medium-sized mushrooms
- 1/4 green capsicum, de-seeded and chopped
- A pinch of white pepper powder
- Salt to taste
How To Make:
- Crack the eggs and remove the yolks.
- Heat 1 Tbsp oil in a large frying pan. Add onions, mushrooms, and capsicum and sauté.
- Pour the egg whites into a bowl. Add salt and whisk it. Add the mixture to the pan and keep stirring until the eggs set. Add a dash of white pepper powder.
- Drizzle a little oil on the sides of the omelet and flip it over to cook on its other side.
- Serve hot.
