Method of preparation:
First,
put the amaranth in water and place the mixture over low fire and cook
it for about 15 minutes. Amaranth will be ready after it soaks all the
water. Once you are done cooking it, put the bowl away from the fire and
let it cool.
Cut the onion,
avocado and tomatoes into cubes or slices, place them in a bowl and add
the cooled amaranth, olive oil and feta cheese afterwards.
Stir everything well and add little bit of salt if needed.
