  • Baby Chicken- 1 whole (cut into 4 pieces)
  • Olive oil-3 tablespoons
  • Turmeric-1/8 teaspoon
  • Baharat (mixed spices)-1/2 teaspoon
  • Kabsa spice mix-1/2 teaspoon
  • Cilantro-3 sprigs
  • Salt
Method Of Preparation:
  1. The first step is to preheat your oven to 350 degrees Fahrenheit.
  2. Remove the skin from the chicken and season it with olive oil and spices.
  3. Now, place the chicken in a roasting pan and put it into the oven.
  4. Let it cook for about 40 to 50 minutes.

  • Peeled and chopped tomatoes-1 ½ cups
  • Dried lime (loomi)-1
  • Cinnamon bark-2 small pieces
  • Basmati rice-1/4 cup
  • Oil-2 tablespoons
  • Salt and freshly-ground black pepper
  • Lemon-1 (cut into half)
Method Of Preparation:
  1. After washing the shanks, place them in a large soup pot and add water.
  2. Take the loomi and pierce both sides and add it to the pot.
  3. Let it simmer slowly over medium heat and skim often as the scum appears.
  4. When it has been well-skimmed and almost boiling, cover the pot and let it simmer on low heat for half an hour.
  5. Now, take a frying pan and fry onions gently in oil until they become transparent.
  6. Add the spices and let it fry for 3 minutes more.
  7. Add this mix to the soup along with tomatoes and salt and pepper. Put on the lid and let it simmer for 1 ½ hours.
  8. Next, remove the cinnamon sticks and loomi and discard them. Take out the shanks and trim the meat off.
  9. Cut the meat into pieces and put them back in the pot of soup.
  10. Now clean and wash your rice thoroughly and add it to the soup.
  11. Cover again and let it simmer until you find the rice adequately tender (for about 30 minutes).
  12. Now that the dish is ready, you can serve it with khoubiz, or flat bread. Squeeze the juice of the halved lemon to add some zest and enjoy!

6. Koussa Mahshi:

Ingredients Needed:
  • White zucchini-8 (the ideal size is 12 cm long)with trimmed and washed stalks
  • Minced lamb-100 grams
  • Long grain rice-50 grams (washed and drained)
  • Finely chopped tomato-1/2
  • Melted butter-10 grams
  • Ground allspice-1/4 teaspoon
  • Ground cinnamon-1/4 teaspoon
  • Tomato paste-70 grams
  • Salt-1/2 teaspoon
Method Of Preparation:
  1. With an apple corer, remove the zucchini’s flesh, leaving a border about 5 mm thick.
  2. Wash them with salted water in a bowl.
  3. Now, take a large bowl and mix in the rice, minced meat, butter, tomato, cinnamon and allspice with 2 teaspoons of water.
  4. Season this mixture and start filling the shells of zucchini about 3-quarters full with it.
  5. Take a large saucepan and place the zucchini and cover with water.
  6. Mix in the salt and tomato paste and let it boil on high heat. Once it has boiled, lower the heat and let it cook for an hour.
  7. When cooked, serve with the broth and enjoy it with yogurt and bread.

7. Dajaj Mashwi:


This is a rich dish with chicken that is stuffed with ground lamb or beef. It is a wonderful dish that everyone will savor!
Ingredients Needed:
  • Whole chicken-1, skinned and cleaned
  • Ground beef or lamb-1/4 lb
  • Baharat-1 ½ teaspoons
  • Tomato puree-1 cup
  • Cooked basmati rice-1 cup
  • Diced onion-1 (small)
  • Raisins-1/8 cup
  • Slivered almonds-1/8 cup
  • Cooked chickpeas-1 cup
  • Crushed garlic-1 clove
  • Olive oil-3 tablespoons, divided
  • Salt and freshly ground pepper
Method Of Preparation:
  1. The first thing you need to do is preheat your oven to 425 degrees Fahrenheit.
  2. Now, take a pan and heat a tablespoon of olive oil over medium heat.
  3. Add the diced onion and ground meat. Let the meat turn brown.
  4. Season with half of the Baharat spice you have and salt and pepper.
  5. Pour this into a large bowl and add rice, raisins and almonds.
  6. Next, take a roasting pan that has a lid and grease it with 2 tablespoons of olive oil.
  7. Place the chicken in the pan and coat it with the oil by turning it.
  8. Stuff the chicken with the ground meat mixture and place it in the pan, breast-side up. Spread the crushed garlic over the chicken.
  9. Now, pour the tomato puree on top and sprinkle the remaining Baharat spice.
  10. Take the cooked chickpeas and scatter around the chicken on the pan and let it mix with the puree.
  11. Add more salt and pepper for seasoning and cover. Place it in your oven and let it bake for about 1 ½ hours.

This is a cauliflower salad that is yummy and healthy. It is simple and takes a short span of time to prepare.
Ingredients Needed:
  • Potatoes-155 grams, cut into small strips (about the size of a matchstick)
  • Cauliflower florets-200 grams (small)
  • Tahini-45 grams
  • Olive oil-30 ml
  • Lettuce leaves-55 grams (torn)
  • Arugula leaves-55 grams (torn)
  • Plain yogurt-45 ml
  • White vinegar-15 ml
  • Lemon juice-15 ml
  • Ground cumin-1 pinch
  • Oil to deep fry potato sticks
Method Of Preparation:
  1. The first step to making this dish is to take a deep fryer and heat oil to 375 degrees Fahrenheit.
  2. Deep-fry the potato sticks for 4 minutes or so, until they are golden and crispy.
  3. Remove them and let the oil get absorbed by paper towels.
  4. Now, your florets can be deep-fried until they are golden brown. Again, get rid of excess oil by placing them on paper towels.
  5. Take your tahini and olive oil and mix them together until you get a smooth consistency.
  6. Next, take your lemon juice, yogurt, cumin, salt, pepper and vinegar and add them to the mix and continue to stir.
  7. Add the cauliflower, lettuce and arugula and toss them to get a good coating of the dressing on them.

9. Persian Spiced Baklava Rolls With Orange Blossom Syrup:


This recipe takes a little over an hour to prepare and cook. You require the following for this delicious dish.
Ingredients Needed:
For the filling:
  • Chopped almonds (blanched if you like)-1 ½ cups
  • Chopped unsalted pistachio nuts-1/2 cup
  • White sugar-1/8 cup
  • Freshly ground cardamom-1/4 teaspoon
For the pastry:
  • Phyllo dough-16 sheets
  • Unmelted, unsalted sweet butter-1 cup
For the syrup:
  • Sugar-less than a cup
  • Water-1/2 cup
  • Freshly squeezed lemon juice-1/2 tablespoon
  • Orange blossom water-1 teaspoon
Method Of Preparation:
  1. Firstly, preheat your oven to about 325 degrees Fahrenheit.
  2. Take all the filling ingredients and mix them well together.
  3. Get a 12×9 or 13×9 baking pan and butter it.
  4. Now, lay your Phyllo sheets on your counter and cover them with a plastic wrap.
  5. Place a damp cloth on top of them.
  6. Take a sheet and butter it well and repeat the process with 3 more so that you have 4 buttered sheets layered on top of each other.
  7. Next, take a large spoonful of the filling mixture and place it on the bottom of the first Phyllo sheet.
  8. Butter the edges and roll until you get something that looks like a large cigar.
  9. Now cut the rolls into pieces about 2 inches long. Repeat this with other rolls. Before you place them in the oven, butter the ends and the top of each roll. Let it bake for about 25 minutes until they turn golden brown.
  10. Making the syrup is simple. Mix your water and sugar in a pot and bring to a boil. Add the lemon juice and let it continue to boil for another 7 minutes or so. Remove the pot from the heat and stir in the orange blossom water.
  11. The syrup should be poured onto the baklavas after they have cooled. Let the baklava soak in the syrup for about 20 minutes and do the same for the other side so that each baklava is evenly covered with the syrup.

10. Sheer Berenj:


This is a light creamy dessert that is often prepared and served during Ramadan. This is a dish that is easy to make and simply delicious!
Ingredients Needed:
  • Rice-1 cup
  • Water-2 cups
  • Half-and-half cream-2 cups
  • 2% low fat milk-2 cups
  • Rosewater-1/2 cup
  • Seal salt-1 pinch
  • Honey or jam
