Ingredients:
  • 2 cups long grained rice, washed and soaked for 1 hour.
  • ½ cup onions, sliced
  • 1 Tbsp. salt to add taste
  • 2 Tbsp. oil for cooking
  • 2Tbsp fresh mint leaves paste
  • Few drops of lemon juice


Method:
  1. Take a sauce pan with a heavy bottom and add oil to it.
  2. Add cumin seeds to it.
  3. Add sliced onions and sauté till the colour of onions turns brown.
  4. Add soaked rice and mint leaves paste and turn around for some time.
  5. Now add 3 cups of water to the rice.
  6. Allow the mixture to boil for few minutes and then sprinkle lemon drops onto it.
  7. Cover the pan and allow the rice to cook on low heat.
  8. After 10 minutes your rice should be ready to serve.

2. Mint Pulao Using Leftover Rice:


Mint Pulao is an instant dish which can be made by using leftover rice. You can eat this pulao in breakfast or lunch with raita and papad.
Ingredients:
  • 1/2 cup cooked Rice (leftover)
  • ½ cup mint leaves
  •  ½ cup chopped coriander leaves
  • ¼ tsp finely chopped ginger
  • 1/2tsp lemon juice
  • Peas 2 tbsp.
  • Grated fresh coconut
  • 2 cloves of garlic
  • 2 Cloves
  • 1 Bay Leaf
  • 1 Green Chilli finely chopped
  • 1 medium Onion sliced 1 tbsp
  •  Ghee
  • Fresh Mint Leaves
  • Roasted Cashew for garnishing
Method:
  1. Heat the ghee in a non-stick pan.
  2. Add bay leaf, cloves and sauté it for approx. ½ minute.
  3. Add chopped green chilli, sliced onion and sauté until onion changes to light brown colour.
  4. Add rice to this mixture.
  5. Now make a paste of mint leaves, coriander leaves, peas, lemon juice, garlic, ginger and grated fresh coconut in a mixer grinder. Mix it gently.
  6. Cook for 2-3 minutes.
  7. Add this pulao in a serving bowl and garnish it with mint leaves and roasted cashews.

3. Mint Rice With Capsicum:

Ingredients:
  • 1 cup cooked rice
  • 1 cup mint leaves
  • 3 green chillies
  • 2 tbsp. oil
  • 8 Pearl Onions
  • ¼ cup diced Capsicum
  • Salt to taste
  • Coriander leaves to garnish
  • ½ cup urad dal
  • 5 to 6 cashews
Method:
  1. First, heat the pan and add oil to it.
  2. Spread the cooked sona masoori or basmati rice and allow it to cool.
  3. Grind mint leaves, green chilli and some water in a grinder to form a fine paste.
  4. Add onions, capsicum, cashews and dal in the pan and stir fry for 2 minutes.
  5. Add cooked rice to the mixture and cover the pan.
  6. Add the mint paste and cook for 3 to 4 minutes.

4. Mint Pulao With Coconut Milk:


Mint Pulao with coconut milk is a simple yet nutritious dish which has the flavours of mint and healthy coconut milk.
Ingredients:
  • 1 cup basmati rice
  • 3 sliced onions
  • 4 tsp coconut milk
  • Garam masala
  • Salt as per taste
  • 1 cup mint leaves
  • Peas
  • 2 green chillies
  • ¼ tsp ginger and garlic paste
  • 2 tsp oil
  • ½ tsp fennel seeds
  • 2 cloves
  • ½ cinnamon stick
  • 1 cardamom
Method:
  1. Wash and soak rice for half an hour.
  2. Make a paste of chillies and mint leaves in a grinder.
  3. Heat oil in a cooker and add onions, ginger garlic paste, peas, fennel seeds, cloves, cardamom and cinnamon stick to it.

  • 1 cup Basmati Rice
  • 2 Onions
  • 10 Paneer cubes (fry it in oil/ghee)
  • 1 tbsp. Oil
  • Salt to taste

  • 1 bunch of pudina
  • 3 Green chillies
  • 1 bit of Ginger 3
  •  cloves of garlic
  • 3 Cloves
  • ½ Cinnamon
Method:
  1. Wash and soak basmati rice in water for 20 minutes. Drain the water and cook rice in the pressure cooker. Add 2 cups of water to the raw rice while cooking it.
  2. Make a paste of pudina, green chillies, ginger and garlic in a grinder.
  3. Heat oil and add all the ingredients.
  4. Add onions and sauté till they turn brown.
  5. Add the green paste, lemon drops, salt and fry for few minutes.

  • 2 cups basmati rice
  • 2 bay leaves
  • 3 cardamom
  • 3 cloves
  • 1 cinnamon stick
  • 1 tsp garam masala
  • 1 tbsp. ginger garlic paste
  • 3 onions sliced
  • ¼ cup green peas
  • ¼ cup soy chunks
  • Few drops of lemon juice
  • 2 tbsp. cashew nuts
  • 2 tbsp. ghee
  • Salt
  • Paste of 1 bunch of mint leaves
  • 4 chillies
Method:
  1. Add ghee in a heavy bottom pan and fry cashews in it.
  2. Add bay leaves, cardamom, cinnamon, cloves, ginger-garlic paste, sliced onions and fry light.
  3. Add garam masala, mint paste and sauté it for 5 minutes.
  4. Add rice, peas and soy chunks and mix them well at low heat.

  • 1 cup rice
  • 1 bunch pudina
  • 1 boiled potato
  • 2 onions
  • ¼ cup green peas
  • 3 Green chillies
  • ½ tbsp cumin seeds
  • Bay leaf
  • Bunch of Coriander leaves
  • Salt ¼ tbsp.
  • Garam masala
  • 2 tbsp oil

  1. Cook rice separately, add salt to it and keep it aside.
  2. Peel boiled potato into 1 inch slices.
  3. Make a paste of mint leaves, chillies, coriander leaves and salt in grinder.
  4. Take a sauce pan, add oil, heat it and add cumin seeds and wait until they splutter.

  • 1 cup raw rice
  • 2 Tomatoes
  • 2 Onions
  • 1 tsp Garam masala

  • ½ bunch Pudina

  • ½ tsp fennel seeds
  • Small piece of Cinnamon
  • 1 Clove
  • 1 Bay leaf
  • 1 Cardamom
  • ¼ tsp Chilli powder
  • Salt Ghee or oil as needed
Method:
  1. Soak rice in water for about 30 minutes, drain the water and set it aside.
  2. Make a paste of tomato in grinder.
  3. Cut onion and chillies in slices.
  4. Fry rice in a pan with a little oil and keep it aside.
  5. Heat oil in a pressure cooker.
  6. Add cinnamon, cardamom, fennel seeds, onion and bay leaf. Fry for a few minutes.
  7. Add ginger garlic paste, chopped pudina, tomato paste, garam masala, salt and chilli powder and fry for some time.
  8. Now add rice, water and cover the pressure cooker and wait for 2 whistles. Turn off the stove, then release the pressure and your dish is ready.

Ingredients:
  • 1 cup raw rice
  • 4 mushrooms chopped and fried
  • 2 Onions
  • 2 Green chillies
  • 1/2 bunch Pudina
  •  1 tsp Ginger garlic paste
  • 1 Bay leaf
  • 1 Cardamom
  • Salt
  • Ghee or oil as needed
Method:
  1. Take a pan and add oil in it.
  2. Add cardamom, onion and bay leaf. Fry for few minutes.
  3. Add ginger garlic paste, chopped pudina, mushrooms, salt, chillies and fry for some time.

  • ½ cup brown basmati rice
  • onion sliced
  • ¼ cup green peas
  • Salt as needed
  • A pinch of turmeric powder
  • 1 tbsp. ghee or cooking oil
  • ½ cup mint leaves
  • 3 red chillies
  • A piece ginger chopped
  • 3 cloves of garlic
  • 1 tbsp. Urad dal
  • ½ cup Tamarind-pulp
Method:
  1. Heat the oil in a pan. Add the red chillies and ginger.
  2. Add the garlic and urad dhal.
  3. Add the mint leaves.
  4. Blend the above mixture with the tamarind extract and salt.
  5. Soak in 1 cup of rice in water for about 45 minutes.
  6. Drain the water and spread on a cloth for a few minutes.
  7. Take a non-stick vessel and add onions, turmeric powder and sauté the onions.
  8. Add water, boil it and then add peas, lower the flame and cover the pan.
